Oatmeal Munchies

This is another recipe that Sloan made at school. This is a little different than my regular no bake cookies because it has some flour in it. I like these so much better. We will be making these a lot at our house!

Oatmeal Munchies

In a saucepan:
4 Tbsp. margarine

3/4 C. sugar

1/4 C. brown sugar

1/4 C. milk

1 Tbsp. plus 1 tsp. cocoa
Pinch of salt

In a mixing bowl:

1/4 C. peanut butter

1/2 tsp. vanilla

1 1/2 C. quick oats

1/4 C. flour


In a small saucepan combine margarine, sugar, brown sugar, milk, cocoa, and salt. In a small mixing bowl, measure the peanut butter, vanilla, quick oats, and flour.

Place the saucepan on burner with medium high heat. Stir constantly with a wooden spoon.

Bring mixture to a boil and let it boil for one minute. (Begin timing when first bubble rises from the bottom of the pan.)

Remove the pan from heat and place on heat-resistant surface.

Add contents of the mixing bowl to the pan. Stir until well mixed. (Mixture should be moist and shiny. If mixture is dry and crumbly, add milk 1 Tbsp. at a time until mixture is moist and shiny.

Scoop onto the cookie sheet with a cookie scoop.

Allow mixture to cool. (They will set up as they cool.)
Makes about 24 cookies.

Tropical Traditions Coconut Peanut Butter Review & Giveaway!

This month I got to try Tropical Traditions  Traditions Coconut Peanut Butter! I was excited about the combination, coconut and peanut butter, yum!

I was excited to try Tropical Traditions Coconut Peanut Butter! I’m a big peanut butter fan (like dipping a spoon into the jar fan). I tried the coconut peanut butter in my favorite Peanut Butter No Bake Cookies and it was a big hit with my family. You can find my recipe here.

Here’s a little information that Dan over at Tropical Traditions told me~

Our Organic Coconut Peanut Butter is mixed with Virgin Coconut Oil which makes it sensitive to temperature.  If you were to store it above 76 it would be more spreadable.  You can also heat it by placing it in a warm/hot bowl of water.  My personal favorite thing about this peanut butter is to take it and warm it up and put it on ice cream. Which once it chills to the ice cream it makes it hard like a candy shell.

Chauncey tried some Organic Coconut Peanut Butter on his ice cream and he really liked the shell it made!

Pudding No Bake Cookies

I found this recipe the other day over at My Little Gems, and had to try it. I have three other no bake cookie recipes (Butterscotch, Peanut Butter and Chocolate), that my family loves, and now we have a new one! I didn't want to run to the store, so I used a White Chocolate pudding mix that I already had and I added some white chocolate chips and semi sweet chocolate chips to it. I can't wait to try it with a butterscotch pudding. There are also some variations- you can use peanut butter instead of the butter and use chocolate pudding, or a low fat version would be fat free pudding mix and low fat evaporated milk. It still has all the sugar, so you wouldn't be saving much.


Pudding No Bake Cookies


2 1/4 cups sugar
2 tablespoons butter
6 oz evaporated milk
4 oz instant pudding mix, I used white chocolate
3 2/3 cup oatmeal

In a large saucepan combine the sugar, butter, evaporated milk and the pudding mix. Cook until it reaches a full boil, then remove it from the heat and let it sit for 15 minutes to thicken. Add the oatmeal and stir well. I added some white chocolate chips and some regular chocolate chips, about 3/4 cup each. Then drop them out onto a cookie sheet with a cookie scoop.

Peanut Butter No Bake Cookies and a little about me




These are a family favorite recipe of ours. They are Peanut butter No Bake Cookies. I like them because they are fast, easy and I always have the ingredients on hand. They are also great to make in the summer when you want a treat but don't want to heat up the house. I'm also sharing the regular Chocolate No Bake Cookie recipe and the Chocolate Peanut Butter No Bake Cookie recipe.



Peanut Butter No Bake Cookies

2 cups sugar
1/2 cup butter
1/2 cup milk
1 cup peanut butter
3 cups quick oats
In a large saucepan over medium heat, cook butter, milk and sugar until it comes to a full boil. Turn down the heat and boil for 3 minutes. Stir in peanut butter until smooth, mix in quick oats. Drop out onto a cookie sheet. Let sit until cool or you can put them in the refrigerator to set up.






Chocolate No Bake Cookies

2 cups sugar
1/2 cup butter
1/2 cup milk
6 tablespoons cocoa powder
3 cups quick oats
1 teaspoon vanilla

In a large saucepan over medium heat, cook butter, milk, sugar and cocoa until it comes to a full boil. Turn down the heat and boil for 3 minutes. Stir in the vanilla and quick oats. Drop onto a cookie sheet. Let sit until cool or you can put them in the refrigerator ti set up.





Chocolate Peanut Butter No Bake Cookies
2 cups sugar
1/2 cup butter
1/2 cup milk
