Pineapple Cake can be a Non Fat Treat!






This is a really great cake recipe that my sister in law gave me years ago. I love this cake! If you don't add the topping, it's a great non-fat treat. I love it topped with fat free Cool Whip. I don't always add the coconut, but this time I did. This cake reminds me of spring!

Pineapple Cake


2 eggs
1 1/2 cups sugar
1 (20 oz) can crushed pineapple, un-drained
1 1/2 teaspoons soda
1/2 teaspoon salt
1 teaspoon vanilla
2-2 1/4 cups flour (high altitude, add the 1/4 cup flour)
1/2 cup coconut, optional
Topping, optional

Heat oven to 350 degrees. Spray a 9x13 inch pan with Pam.

In a bowl whisk the flour, soda and salt.

In a bowl with a wooden spoon mix the sugar, eggs and vanilla. Beat in the flour mixture. Pour into prepared pan. Sprinkle with coconut. Bake for 30 minutes.

Topping

In a small pan heat-

3/4 cup sugar
1/2 cup butter
1/4 cup milk
1/2 teaspoon vanilla

Heat until boiling and pour over warm cake.

My morning and a healthy low fat treat!

I like to get up early in the morning....
... I like my quiet time.

Every morning,

I crawl out of bed at 4:30 a.m.


It's so much cozier in my warm bed, but I know that if I don't steal away now...

I will not have another opportunity at quiet, uninterrupted time.


I pull on my workout clothes and a hoodie...


...stuff my toes into my soft warm slippers...
...and make myself a nice hot cup of herb tea.

The house is dark.
Quiet. Still.

You can hear the water trickling in the fish tank. But nothing else.

My cup warm between my palms.


Husband. Daughter. Son. Dogs.
All in bed.

I sit down at the table, say a little prayer....


...and open my scriptures...

...I'm coming to love this time with my scriptures...


...The time slips by so fast! ...

I put on my running shoes, jacket, headband, gloves and running watch

I slip out of the house to the dark quiet street, lit by the moon and street lamps for a quick run.

I love the quiet, the solitude, the peace.

My steady breathing, my quiet footfall....


...I finish my route and return to the quiet, dark, still house...


The sun starts to come up...

and rustling can be heard in the rooms.


Husband is still sleeping, he stays up way to late...


...Sloan is popping into the shower...


...Chauncey is wandering down to the other shower...


The day, whether I like it or not, it about to begin.


And it won't be for another 23 hours that it will be this quiet and dark and still again.


But no matter how tired I am...

I find a way to crawl out of bed before the rest...


...because if I don't...


...I *feel* it.







I'm going to share a little secret with you. I don't eat the baked goodies I make. I taste them, then I put them under glass for my kids and sweet hubby to eat. So, I'm going to share one of my favorite almost fat free snack with you! If you're use to eating the high fat popcorn, you'll have to make this a few times before you really start to enjoy the taste of the popcorn and not butter. I remove the un-popped corn kernels that's left in the bottom of the bowl, then I reuse the sugar and cinnamon mixture. It doesn't stick really well to the popcorn, and I don't want to use a lot of Pam.

Carol's Cinnamon Popcorn

1/4 cup popcorn
3 tablespoons Splenda
1 teaspoon cinnamon
Pam

I use an air popper to pop the popcorn. Pop it into a big bowl.

Mix the Splenda and cinnamon in a small bowl. Spray the top of the popcorn in the bowl with the Pam and sprinkle with the Splenda mixture. Toss with a spoon, then spray and sprinkle again, toss and spray and sprinkle again. Now enjoy this nice treat!

Spiced Pumpkin Bars (non fat bars!)

This is a great cake without fat! Yup, that's right, there is no fat, just pumpkin and applesauce! Of course if you want to keep it non fat, don't put the frosting on it! You could just sprinkle it with a little powdered sugar or use a dollop of Cool Whip.

Spiced Pumpkin Bars

2 cups flour
1 1/2 cups sugar
1 tablespoon baking powder
2 teaspoons cinnamon
1 teaspoon soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cloves
4 eggs
1 3/4 cups pumpkin
1 cup applesauce

Heat oven to 350 degrees. Spray a 9x13 pan with Pam.

In a large bowl whisk all the dry ingredients.

In another bowl whisk all the wet ingredients. Mix this into the dry ingredients. Pour into prepared pan. Bake for 30 minutes or until a wooden pick comes out clean. Cool and frost.

Vanilla Frosting

4 cups powdered sugar
1/2 cup butter, room temperature
1 teaspoon vanilla
Milk

Put the powdered sugar in the mixer and add the butter, start mixing while you drizzle in the milk. Just add a little at a time until you get the right consistency.

Zucchini Burgers

I still have zucchini hiding in my refrigerator so I decided to try making some Zucchini Burgers or Patties. I thought they were wonderful! They have a nice onion, zucchini flavor. They would be good with cheese melted on top in a bun too!


Zucchini Burgers

2 cups zucchini, grated
1/4 cup onion, finely chopped
2 slices whole wheat bread, make into fine breadcrumbs
1 egg
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 teaspoon seasoning salt
1/4 teaspoon smoky paprika, or regular paprika
1/2 cup whole wheat flour

Heat a griddle and spray with Pam.

Mix all the ingredients except the whole wheat flour in a bowl. Make into patties. Put the whole wheat flour in a bowl or plate and coat the patties. Fry on both sides until brown.

Work For Me Wednesday and Non Fat Brownies, a super easy recipe!

This weeks theme for Work For Me Wednesday is Back to School. A fun idea is to make lunch sacks ahead of time for the year. You could even get the kids involved in making them. You can even make little notes of encouragement to put in each sack. We all know how hectic school mornings are! Head on over to We Are That Family for some more ideas!








A friend of mine at the gym told me about these brownies, so I decided to try them. I looked at all the low fat brownie mixes at the store, and it turns out that a regular brownie mix has less calories in the dry mix than the low fat. That's looking at just the mix before you add any other ingredients. So, I went with a regular brownie mix. My family loves these! They are more cakey then my regular brownies, but the have a great chocolate flavor and they are super easy to make!






Non Fat Brownies


1 brownie mix
1 can of black beans, rinsed

Preheat oven to 350 degrees. Spray a 9x9 or 8x8 inch pan with Pam.

After rinsing the beans, put them back into the can and fill the can with water, then dump the whole thing into the blender and puree.

In a mixing bowl mix the pureed beans and the brownie mix until well blended. Pour into prepared pan and bake 40-45 minutes. Cool, then cut into squares.
