Cabbage Soup

I love nice big bowl of this soup, it is very filling and you can really add anything you like to it. This time we added turkey kielbasa. I usually just make it without meat, it’s a very filling soup.

Cabbage Soup

1 large can of V8 juice or tomato juice*

1 can tomatoes, put them in the blender but leave a little chunky

3-4 cups chopped cabbage

2 cups chopped onion

1 cup chopped celery

1 cup chopped carrots

2-3 bullion cubes

3-4 cups water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon pepper

pinch of red pepper flakes

In a large pot sauté the onion in the oil. Cook until onion is clear. Add the tomatoes and V8 juice, water, veggies and seasonings. Cook until veggies are tender.

We used 2 pounds of turkey kielbasa, cut into chunks, split in half and grilled, then we sliced them into bite size pieces.

Calico Bean Soup

I made this bean soup mix for a group at church and it was really fun and easy. I added cooked Italian sausage to my soup, along with some onion powder, garlic powder and a few red pepper flakes. There were 4 of us that made this bean soup with different variations, and everyone liked mine best.

This was the first time I’ve cooked with dried beans where my husband didn’t complain of gas. I think it was because it suggested washing the pot with soap before using it for the rest of the recipe.

The bean soup mix looks like the jar on the right.

To Make Calico Bean Soup Mix~

In a 1 quart jar layer~

2/3 cup plus 1 tablespoon Dry Black Beans

2/3 cup plus 1 tablespoon Dry Great White Northern Beans

2/3 cup plus 1 tablespoon Dry Red Kidney Beans

2/3 cup plus 1 tablespoon Dry Pinto Beans

2/3 cup plus 1 tablespoon Dry Green Split Peas

Flavor Packet~

(Put in a small zip lock bag and place in top of jar)

3 Beef or Chicken Bouillon cubes

3 tablespoons dried chives

1 teaspoon salt

1 teaspoon savory seasoning

1/2 teaspoon cumin

1/2 teaspoon black pepper

1 bay leaf

Place lid on screw lid on jar. Decorate as desired. Be sure and give the directions for making the soup with the jar~

Calico Bean Soup~

Quick cook method~

Rinse beans.

Put beans in a large pot. Add 9 cups of water.

Heat to boiling and cook for 3 minutes.

Remove from heat and let them sit for 1 hour.

After 1 hour, drain and rinse the beans very well. Wash the large pot.

Put the drained beans back into the washed pot and add 5-6 cups of water. Cook until beans are tender. Drain.

Add flavor packet and 5 cups water simmer for 30 minutes and serve.

To add more flavor and variety add the following ingredients when you add the flavor packet add any of these~

1 quart tomatoes

1 can corn, drained

1 pound browned sausage, chicken or hamburger.

Lamp Makeover, A Giveaway, And Tastes Like Lasagna Soup

I found this simple little lamp at DI, but when I brought it home my sweet hubby said it needed to be fixed a little before it would hold a lampshade. I found a nice plain white lampshade at Walmart on sale for $1.50. My sweet hubby painted the lamp hammered gold, and I got to work on the lampshade.



So here is my lamp after-wards. I love how it turned out!

I found this recipe the other day over at Sweet Basil and knew right away that my family would love it! Chauncey keeps begging for soup when it's cold out! I added the hint that Sweet Basil gave on her blog along with the recipe.

Tastes Like Lasagna Soup


1 lb Hamburger
1 Onion, Chopped
1 Green Bell Pepper, Chopped
3 Cloves Garlic, Minced
1 (32oz) Box Low Sodium Chicken Broth
2 (14.5 oz) Cans Petite Diced Tomatoes
1 (15 oz) Can Tomato Sauce
1 tablespoon Brown Sugar
2 teaspoons Italian Seasoning
1/2 teaspoon Salt
2 Cups Broken Lasagna Noodles
3/4 Cup Fresh Grated Parmesan
Shredded Mozzarella Cheese
Baguettes to serve with soup

In a large Dutch Oven, combine hamburger, onion, bell pepper and garlic. Cook over med-high high 8-10 minutes stirring occasionally until meat is browned. Drain well.

Stir in broth, tomatoes, tomato sauce, brown sugar, Italian seasoning, and salt. Bring to a boil over medium-high heat; reduce heat and simmer 15 minutes. *I always add a little extra broth to mine because the noodles absorb so much of it**Add noodles and simmer until the noodles are tender. Add Parmesan cheese.

Pre-heat broiler. Ladle soup into oven safe bowls, top with cheese and place under broiler until cheese is melted.
