S'more Cupcakes






I found this recipe over at
All Things Heart and Home and had to make them for the kids! They loved them! I loved the graham cracker crust with the chocolate cake, yum! I didn't want to make to many cupcakes, so I made 24 cupcakes and a small cake to take over to my neighbors.


S'more Cupcakes


2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons soda
2 eggs
1/2 cup oil
1 cup milk
2 teaspoons vanilla
1 cup boiling water
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
1/4 cup sugar
9 oz ch0colate chips

Heat the oven to 350 degrees. Line 2, 12 cup muffin tins with cupcake liners and spray an 8x8 pan with Pam.

Whisk flour, baking powder, soda and cocoa in a bowl.

Beat the sugar, oil, vanilla and eggs. Mix in the milk and flour mixture. Add the boiling water. This makes a really thin batter, but it's ok.

In another bowl mix the graham cracker crumbs, the 1/4 cup sugar and the melted butter. Put about 1 tablespoon in each cupcake liner. Tamp it down with a juice glass. Sprinkle on a few chocolate chips on top of crusts. Fill 3/4 full with cake batter. Pour the rest of the batter in the prepared pan. Bake for 18-20 minutes. Cool.

Marshmallow Creme Frosting

1/4 cup butter, softened
1 7 oz jar marshmallow creme
1 teaspoon vanilla
1 16 oz package powdered sugar
1 - 2 tablespoons milk

Mix butter, marshmallow creme and vanilla in a small bowl; beat on medium speed until well blended. Gradually add the sugar, beating well after each addition until well blended. Blend in the milk 1 tablespoon at a time, adding the second tablespoon only if needed. Frost cupcakes and cake.

Chocolate Mint Oreo Cupcakes and a Contest!

My daughter Sloan wanted to make cupcakes, so after a little chat to figure out what kind she wanted, and a call to her older sister, Jennie (over at Tuffets) we came up with our own recipe with Sloan's favorite ice cream flavors! We had so many goodies in the house we walked some over across the street to some neighbors with little kids! Thank goodness they didn't mind!


Chocolate Mint Oreo Cupcakes

2 cups flour
1 1/2 cups sugar
6 tablespoons cocoa powder (I used 3T dark cocoa & 3T regular)
1 1/2 teaspoons soda
1/2 teaspoon salt
1 1/4 cups buttermilk (I used milk soured with 2T vinegar,minus 2T milk)
2 eggs
1 teaspoon vanilla
1/2 cup shortening
1 bag mint chips, save out about 1/3 cup for top of cupcakes
11 crushed mint Oreo's (I just crushed them up in a Ziplock bag)

Preheat oven to 350 degrees. Line 2 muffin tins with cupcake liners (makes 24).
In a mixer bowl measure all the dry ingredients and mix for a minute. Add the wet ingredients and beat for 3 minutes on high. Add 1 bag mint flavored chips and crushed mint Oreos, and mix in with a spoon. Scoop into cupcake liners, I use my 1/4 cup ice cream scoop. Bake for 25 minutes. Cool and frost.

Mint Oreo Frosting

8 cups powdered sugar
1/2 cup butter
1/4 cup shortening
1/2 teaspoon mint extract
1/4 to 1/3 cup milk
2-3 drops green food coloring
8 Oreo's, finely crushed

Toppings

Reserved mint chips from cupcakes
Cut up Oreo's

Cream the butter and shortening, add the powdered sugar, mint extract and 1/4 cup of the milk. Add the rest of the milk if needed. Add in crushed Oreo's by hand. Pipe frosting on cupcakes. Top with some cut up Oreo's and some of the reserved mint chips.


Sloan is wearing my favorite apron that a dear friend of mine gave me for my birthday this year. It looks like a baby doll top. I keep teasing my family that if I can't decide what to wear, I might just wear it with a little t-shirt!

Black Bottom Cupcakes


I got this recipe years ago from someone my husband worked for. These are really yummy and they taste great without frosting too. They really are best with the mini-semi-sweet chocolate chips.



Black Bottom Cupcakes

Filling:

1 8oz package cream cheese, softened
1 egg
1 teaspoon vanilla
1/3 cup sugar
1/8 teaspoon salt
1 cup mini semi sweet chocolate chips

Cupcake Batter

1 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 cup sugar
1/4 cup cocoa powder
1 cup water
1/3 cup oil
1 tablespoon vinegar
1 teaspoon vanilla

Filling:

In a mixing bowl beat the softened cream cheese, egg and vanilla. Beat in the sugar and salt. Fold in mini chocolate chips.

Cupcake Batter:

Put all the dry ingredients in a mixing bowl and whisk well. Add all the wet ingredients and beat well.

To assemble cupcakes, put liners in 2 (12 cup) cupcake pans. Fill liners 1/3 full with cupcake batter. Then put about a tablespoon full of filling. If you have any batter left add some over the top of the filling. Bake at 350 degrees for 25-30 minutes. Let cool in pans then frost.

This is my favorite cookie scoop! I used it to put the batter in the liners.

Frosting

4 cups powdered sugar
1 cup shortening
1/2 cup butter, softened
2 teaspoons vanilla
2 egg whites

Beat all the ingredients in a large mixing bowl until fluffy and well mixed. Pipe onto cooled cupcakes.
