S'more Cupcakes






I found this recipe over at
All Things Heart and Home and had to make them for the kids! They loved them! I loved the graham cracker crust with the chocolate cake, yum! I didn't want to make to many cupcakes, so I made 24 cupcakes and a small cake to take over to my neighbors.


S'more Cupcakes


2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons soda
2 eggs
1/2 cup oil
1 cup milk
2 teaspoons vanilla
1 cup boiling water
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
1/4 cup sugar
9 oz ch0colate chips

Heat the oven to 350 degrees. Line 2, 12 cup muffin tins with cupcake liners and spray an 8x8 pan with Pam.

Whisk flour, baking powder, soda and cocoa in a bowl.

Beat the sugar, oil, vanilla and eggs. Mix in the milk and flour mixture. Add the boiling water. This makes a really thin batter, but it's ok.

In another bowl mix the graham cracker crumbs, the 1/4 cup sugar and the melted butter. Put about 1 tablespoon in each cupcake liner. Tamp it down with a juice glass. Sprinkle on a few chocolate chips on top of crusts. Fill 3/4 full with cake batter. Pour the rest of the batter in the prepared pan. Bake for 18-20 minutes. Cool.

Marshmallow Creme Frosting

1/4 cup butter, softened
1 7 oz jar marshmallow creme
1 teaspoon vanilla
1 16 oz package powdered sugar
1 - 2 tablespoons milk

Mix butter, marshmallow creme and vanilla in a small bowl; beat on medium speed until well blended. Gradually add the sugar, beating well after each addition until well blended. Blend in the milk 1 tablespoon at a time, adding the second tablespoon only if needed. Frost cupcakes and cake.
