Banana Whoopie Pies

My husband especially liked these whoopie pies! I like that they use up some of my brown bananas!

Banana Whoopie Pies
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups sugar
1/4 cup oil
1  egg
1 teaspoon vanilla
3/4 cups mashed banana

Heat oven 350 degrees. In a bowl whisk the flour, cinnamon, baking powder and salt. In a large bowl, cream together the oil and sugar until light. Beat in egg  followed by vanilla and mashed banana. Add flour mixture and stir until just mixed.


Drop with a cookie scoop onto cookie sheets and bake for 12-14 minutes, or until cookies are lightly browned around the edges and “set” in the center.
Remove to a wire rack to cool.
Makes about 2 dozen cookies (1 dozen sandwich cookies).

Cream Cheese Filling
8 oz cream cheese, room temperature
8 tablespoons butter, room temperature
1 teaspoons vanilla 
8 or more cups powdered sugar

In a medium bowl, beat together cream cheese and butter until smooth. Blend in vanilla and powdered sugar until mixture is smooth and thick add more powdered sugar if the filling seems to thin.

Homemade Oreos

My family loves Oreos, so when I came across this recipe I had to try it! I used a little mint flavoring and green food coloring in the filling because Sloan loves mint. I made my cookies small like Oreos, so it made quiet a few, but if you make them bigger there won’t be as many. I want to make them again with orange filling with orange and brown sprinkles dipped on the edges.

Homemade Oreos


1 1/4 cups flour
1/2 cup cocoa
1 teaspoon soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
1 1/4 sticks butter, room temperature
1 large egg

1 teaspoon vanilla

Filling

1/4 cup butter, room temperature
1/4 cup vegetable shortening
2 cups powdered sugar
2 teaspoons vanilla(I used 1 teaspoon mint and a few drops of green food coloring)

~I doubled the amount of filling because I wasn’t sure if it was enough.~

Heat oven to 350 degrees. In a large bowl whisk all the dry ingredients.

In a mixer beat the butter and the sugar for 3 minutes. Add the egg and the vanilla. Mix in the dry ingredients. Roll into balls and slightly flatten on a cookie sheet. Bake for 10 minutes. Let cool on cookie sheet for 1 minute then remove to cookie coolers to cool completely before filling.

For Filling

In a mixer beat the butter and shortening for 1 minute, add the vanilla, then slowly add the powdered sugar. Beat for 3 minutes on high.

Fit a pastry bag with a 1/2 tip and fill with filling. Pipe onto a cookie and top with a second cookie.

Chocolate Whoppie Pies


We love Whoopie Pies at our house, their are a nice big cookie snack! You can make them really big like they do on the East Coast or smaller. I like to use my regular cookie scoop because we are talking about 2 cookies sandwiched together with a lot of filling...Yum!

Chocolate Whoopie Pies

4 cups flour
2 teaspoons baking soda
1 cup cocoa
dash of salt
2 cups sugar
1 cup shortening
2 eggs
1 cup milk
1 cup warm water
2 teaspoons vanilla

In a mixing bowl, combine the flour, baking soda, cocoa and salt; mix well and set aside. In a separate bowl, combine the sugar, shortening and eggs. Beat for about 2 minutes. Mix the dry ingredients with the egg mixture. Add the milk and warm water and beat at medium speed for 2 to 3 minutes. Add the vanilla and beat again until the ingredients are thoroughly blended. This batter is for a cake like cookie. Bake as drop cookies. Drop by rounded tablespoons full onto ungreased non-stick cookie sheets. Bake in a preheated oven at 375° for 10 to 12 minutes or until the center of the cookies spring back when lightly pressed. Remove from the cookie sheets and cool a wire rack or white paper towels.

Filling

2 egg whites
2 teaspoons vanilla
4 tablespoons flour
4 tablespoons milk
6 cups powdered sugar
1-1/2 cups vegetable shortening

Beat the egg whites until stiff; set aside. Combine the other ingredients and beat very hard for several minutes at high speed. Fold in the beaten egg whites. To make the whoopie pies - Spread a generous amount of filling on a completely cooled cookie. Top with another cookie. Wrap each whoopie pie individually in plastic wrap.

Peanut Butter Whoopie Pies


The other night my sweet hubby and I went on a date to give blood, fun huh? Well, they do have free snacks and juice! lol Well, my sweet hubby had a package of the little Nutter Butter Bites. He was sweet enough to give me one (I was picking the nuts out of a package of trail mix and drinking water, trying to be good!) and I said hey, I should try making peanut butter whoopie pies! So I came up with this recipe! I added oatmeal too the cookie, hey, oatmeal, peanut butter, that's kind of healthy!

Peanut Butter Whoopie Pies

1/2 cup shortening
1/4 cup peanut butter
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon soda
1 cup flour
3 cups oatmeal

Heat oven to 350 degrees. In a bowl whisk all the dry ingredients.

In a mixer beat the shortening, peanut butter, egg and water. Add the dry ingredients and mix well. Scoop onto a cookie sheet with a cookie scoop. Flatten with a glass. Bake for 10 minutes. Remove to cookie racks to cool.

Frosting/Filling

4 cups powdered sugar
1/4 cup peanut butter
1/3 cup butter
milk

Beat all the ingredients drizzling in enough milk to make a good frosting/filling. Sorry, I don't ever remember to measure this part. Spread on cooled cookie, top with another cookie, say WHOOPIE!

Lemon Whoopie Pies


This recipe comes from Joy The Baker. I was having some friends over for tea, so I decided to try these. I love the intense lemon flavor of these!

Lemon Whoopie Pies


1 cup sugar
3/4 stick butter
1 egg
1 teaspoon lemon zest
1 teaspoon vanilla
1 tablespoon lemon juice
1/2 cup buttermilk, I soured milk with vinegar
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon soda
1/4 teaspoon salt

Heat the oven to 350. In a bowl whisk the dry ingredients.

In a mixer beat the sugar and butter for 3 minutes. Beat in the egg, lemon zest, lemon juice and vanilla. Add the buttermilk. The mixture will look curdled. Add the dry ingredients and mix well.

Drop onto cookie sheet with a cookie scoop. Bake 10 minutes. Let cool then remove to cookie rack.

Lemon Filling

3 oz cream cheese
6 Tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon vanilla extract
1 teaspoon finely grated lemon zest
2 Tablespoons lemon juice
2 3/4 cup powdered sugar

Beat all the ingredients (except lemon juice) in a mixer until light and fluffy adding enough lemon juice to make the frosting spreadable. Spread on a cooled cookie. Top with another cookie.

We need a chocolate fix here!


Do you ever notice how sometimes when you want to bake all you can think of is must have chocolate? Well, that's what I was thinking and that's what my kids were saying too, so I grabbed my trusty recipe stash and pulled out my whoopie pie recipe.

I found out a while back that Whoopie Pies are a southern treat. I got my recipe years ago when I was first married. I don't make them very often because they seem like a lot of work, but then when I make them I realize they're not! So if you're craving some chocolate these do the trick! They don't make a whole lot because they are sandwiched together, but it could be a good thing that you don't end up with a lot, they are rich and yummy and totally decadent!

Whoopie Pies


1 cup sugar
1/2 cup shortening
1 egg
1 egg yolk, save the egg white for the frosting filling
1/2 cup hot water
1 teaspoon soda
2/3 buttermilk, I used milk with vinegar(take out 1 tablespoon of milk & replace with vinegar)
2/3 cup cocoa powder
2 cups flour
1/4 teaspoon salt

Frosting Filling

2 cups powdered sugar
1/2 cup shortening
1/4 cup butter
1 teaspoon vanilla
1 egg white

Cream the shortening, butter and sugar. Add the egg, egg yolk and vanilla. Dissolve the soda in the hot water. Add the dry ingredients (flour, cocoa & salt) alternately with the soured milk and soda water. Drop onto cookie sheets. Bake at 350 degrees for 8-9 minutes. These are a cakey cookie. Remove from cookie sheet to cool on a cookie rack. When cool frost the bottom of one cookie. Place the bottom of a second cookie on frosting. Enjoy!

Frosting filling

In a bowl cream the butter and shortening. Add the powdered sugar, vanilla and egg white. Beat until fluffy.
