Cabbage Soup

I love nice big bowl of this soup, it is very filling and you can really add anything you like to it. This time we added turkey kielbasa. I usually just make it without meat, it’s a very filling soup.

Cabbage Soup

1 large can of V8 juice or tomato juice*

1 can tomatoes, put them in the blender but leave a little chunky

3-4 cups chopped cabbage

2 cups chopped onion

1 cup chopped celery

1 cup chopped carrots

2-3 bullion cubes

3-4 cups water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon pepper

pinch of red pepper flakes

In a large pot sauté the onion in the oil. Cook until onion is clear. Add the tomatoes and V8 juice, water, veggies and seasonings. Cook until veggies are tender.

We used 2 pounds of turkey kielbasa, cut into chunks, split in half and grilled, then we sliced them into bite size pieces.
