A Cookie Tip and Big Batch Chip Cookies

I thought I'd share a little cookie tip with you for Work For Me Wednesday!


I use to love a big batch cookie recipe because I only had to bake once. Now I love it for a different reason. I bake one sheet of cookies, and drop the rest into balls on the cookie sheet to freeze. After they have frozen I put them into a freezer bag, label and pop them in the freezer. Then we can have hot cookies anytime we want them! This is a great chocolate chip cookie recipe. It's a little different with the almond extract and the coconut, but it bakes up nice and moist and yummy!

Big Batch Chip Cookies

1 1/2 cups butter, softened
1 1/2 cups sugar
3/4 cup brown sugar
3 eggs
3 teaspoons vanilla
1 teaspoon almond extract
4 cups flour
1 1/2 teaspoons soda
1 1/4 teaspoons salt
2 cups chocolate chips
1/2 cup coconut

Heat oven to 375 degrees. Whisk the flour, soda and salt in a bowl.

In a mixer beat the sugar, brown sugar and butter for 2 minutes. Beat in the eggs and extracts. Mix in the dry ingredients. Mix in the chips and coconut. Drop with a cookie scoop onto cookie sheets. Bake for 10-12 minutes. Cool on cookie racks.

great tip! I used to keep the store-bought dough in my freezer/fridge for this purpose back in my college days (nothing beats the smell of fresh baked goods for attracting new friends to your door), but since we gave up processed foods (or trying to, anyway) this had become a thing of the past. Not anymore, however, thanks to you!
