Famous Mint Brownies


I found this recipe for Famous Mint Brownies over at Make it Do. This was a great recipe and pretty simple. Sloan is one happy girl because chocolate and mint are her favorite!


Famous Mint Brownies


1 cup butter, melted
1/2 cup cocoa
2 cups sugar
4 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 1/2 cups flour

Mint Frosting

2 cups powdered sugar (I used 3 cups)
1/2 cup butter, room temperature
2 tablespoons milk (I used 3)
1 teaspoon peppermint extract
4 drops green food coloring

Chocolate Ganache

1/2 cup butter
1 1/2 cup chocolate chips

Preheat oven to 350 degrees. Spray a 9x13 inch pan with Pam.

In a bowl whisk the flour, salt and cocoa. In a mixer beat the melted butter and sugar for 2 minutes. Beat in the eggs. Add the dry ingredients. Pour into prepared pan and bake for 25-28 minutes. Cool.

For Frosting

Beat the butter, milk, extract, food coloring and powdered sugar on high for 3 minutes. Spread on cooled brownies.

For Chocolate Ganache

In a small bowl melt the butter. In another bowl melt the chocolate chips in the microwave for 30 seconds, then stir. Microwave for another 15 seconds and stir. Microwave 15 seconds more and stir until smooth. Stir in the melted butter and spread over mint frosting.
