Peach Coffee Cake and a contest!

This last weekend was our town's yearly celebration, Peach Days! I still have peaches from my parents peach tree, so we made our own peach shakes yesterday, and I thought something for breakfast with peaches would be good, so I came up with this new recipe.

Sloan came in this morning and asked me what was for breakfast, I told her coffee cake. She said your regular one or are you trying a new recipe. I told her it was a new recipe and that I thought she would like it! She didn't seem very happy. While she was eating I asked her if that was her second piece, and she said no, it was her third! The three of them ate the whole thing! It's a good thing I had my regular bowl of hot cereal!


Peach Coffee Cake

3 large peaches
1 1/2 cups flour
1 teaspoon baking powder
1/4 soda
1/4 salt
8 tablespoons butter, softened
1/2 cup sugar
1/4 cup brown sugar
2 eggs
1/2 cup yogurt
1 teaspoon vanilla
1/4 teaspoon almond extract

Topping

1/2 cup brown sugar
3/4 cup flour
1/2 teaspoon cinnamon
pinch of nutmeg
5 tablespoons butter, melted

Peel and thinly slice the peaches and put them on on paper towels to remove excess moisture. I used a regular towel.

Spray a 9 inch springform pan with Pam. Heat oven to 350 degrees.

Whisk the dry ingredients in a bowl.

In a mixer beat the butter and sugar for 3-4 minutes. Add the eggs, extracts and yogurt. Mix in the dry ingredients until just mixed.

Pour into prepared pan and smooth surface. Cover with the sliced peaches.

In another bowl whisk the brown sugar, flour, cinnamon and nutmeg. Add the melted butter and mix well with a fork. Crumble this mixture with your hands over the peaches.

Bake for 40-45 minutes. Cool on a wire rack for 10 minutes. Remove outer edge of springform pan and place on a cake plate. Serve warm or cold.
