Almost Good For you Chocolate Chip Cookies and a 2 Contests!

A friend of mine emailed me a link to a cookie recipe she thought I'd want to try. It was made on one of our local TV shows called Studio 5. I had all the ingredients, so I made some up. I did use a couple of substitutions. I always seem to have to tweek a recipe! These cookies turned out really good! They have that nice whole wheat flour flavor and the brown sugar and the chocolate chips are yummy! And, if you make them with some Splenda and Smart Balance they're almost good for you! The kids didn't even notice anything different about them!

Almost Good For you Chocolate Chip Cookies

1/2 cup butter, I used Smart Balance
1/2 cup brown sugar, I used 1/4 cup brown sugar & 1/4 cup Splenda
1 egg
1 teaspoon vanilla
1/2 teaspoon soda
1/2 teaspoon salt
1 1/8 cup Whole Wheat Pastry Flour
6 oz semi sweet chocolate chips

Preheat oven to 350 degrees.

Beat the butter and the sugar for 3 minutes. Beat in the egg and vanilla.

In a bowl whisk the flour, soda and salt. Add to the creamed sugar and egg mixture. Mix well, then add in the chocolate chips and mix well.

Drop onto cookie sheet with a cookie scoop.

Bake for 10 minutes.
