Mango Pancakes with Mango Syrup and I'm Home Alone!

My kids are in our local park and recreation programs summer activities. Chauncey is one of the youth volunteers this year and Sloan is in the program. They went to Antelope Island today. This is a picture of part of the Ranch that's on the island.

This is Sloan. The kids that are signed up for the program wear yellow t-shirts this year and the youth volunteers wear yellow. They go on 5 adventures, one a week. I love that they get to go off and have fun with other kids. Of course that means that I have to be home all alone! A shame isn't it! I'm not complaining, what mom has ever complained about being home alone!


This is my china cabinet. My mother gave it to me, it was hers when I was growing up. A while back I saw a picture in a magazine and it showed teacups and saucers all stacked nice. So, I re-stacked all of mine. I like it a lot better. So my china cabinet is one of my favorite things!




My sister in law gave me two small cases of mango's the other day, so I decided to make something different. I came up with mango pancakes with mango syrup. It was a hit! Except I had to add a few chocolate chips to Sloan's! Who knew, mango and chocolate chip pancakes with maple syrup was a taste treat for my picky eater!

Mango Pancakes

2 1/2 cups flour
1/2 cup cornmeal
1 cup milk
1 cup plain yogurt, or sour cream
1 cup chopped mango
2 teaspoons lemon juice
2 1/2 teaspoons baking powder
1 1/2 teaspoons soda
1/2 teaspoon salt
4 eggs, beaten

In a bowl, whisk the dry ingredients. Mix in the wet ingredients. Add the mango's and mix. Pour onto greased hot griddle by 1/2 cup. Cook until bubbles start to form, flip and brown.

I left a few little pieces of mango in the syrup

Mango Syrup

3 cups sliced mango's
1 cup hot water
1 cup sugar
2 teaspoons lemon juice

Puree all ingredients in a blender. Cook on medium heat in a small pan, stirring occasionally until it boils. Reduce heat. Cook 5-10 minutes. Serve on pancakes or vanilla ice cream.

breakfast looks good. But what really caught my eye was Antelope Island. I used to live in Utah when my dad was stationed at Hill. We were small then and I remember all the fun hikes we did there. ahh good times :)

I haven't heard of Antelope island. I think I must need to get out more. Love the pancakes though! My husband will be so excited when I make them! OH! Maybe for Fathers Day Breakfast!
