Muffins for breakfast because I'm going running.
I like to make muffins for my family for breakfast on the mornings I run. It's quick and easy and I can leave them out for my family to find. Sometimes I mix up the dry ingredients the night before and measure out the wet ingredients and put the wet ingredients in the fridge. Then all I have to do is mix and bake!
Orange Chocolate Chip Muffins
2 cups flour
1/2 cup sugar
1/4 teaspoon salt
3 teaspoons baking powder
1 cup orange juice
zest of 1 orange
1/4 cup oil
1 egg
1 cup semi sweet chocolate chips or more if you like!
Put all the dry ingredients in a bowl and whisk until mixed. Add the wet ingredients, stir well. Add the chocolate chips and orange zest and mix well. Scoop into greased mini muffin tins, or regular muffin tins. Makes 24 mini or 12 regular muffins. Bake at 400 degrees for 15 minutes for mini or 25 minutes for regular.

Alton Brown says that you can mix the muffins up all the way and leave it in the fridge overnight. I've done it and it works like a charm :) Although, I only do it if we have people over or something, usually I want a different kind of muffin by the time I wake up! I like to leave my options open.
