Double Flake Cookies

                     DOUBLEFLAKECOOKIES 

I came across this recipe in one of my favorite author’s books. Ok, now don’t laugh, I love Joanne Fluke’s books because they are mysteries and she has recipes in them! The main character owns a cookie shop so her books are full of cookie recipes! I know, just my style! I had to adapt this one a little because I didn’t want to wait 4 hours for the dough to chill. I love that it has potato flakes in them and you’d never guess!

Double Flake Cookies

1 cup butter, melted

3 eggs

1 1/2 cups sugar

2 teaspoons cream of tartar

1 teaspoon soda

1/2 teaspoon salt

1 teaspoon vanilla

2 cups flour

2 cups instant potato flakes

1 cup coconut, pack it in

*about 1/2 cup sugar for later

Heat oven to 350 degrees. Whisk the dry ingredients in a large bowl, yup, put the potato flakes in too!

In a mix beat the eggs add in the sugar and beat until fluffy. Add the melted butter then the dry ingredients. Mix in the coconut. Scoop out onto cookie sheets. Wet a glass on the bottom and dip it into the sugar and press it on a cookie, repeat with each cookie. Bake for 10-12 minutes. Remove and cool on cookie racks.

I'm curious what the potato flakes add to the cookies. Aren't recipes fun? There are a couple of authors that I read, too, and they include a recipe here and there. I always say I'll try them all, but never do :(

I've never put potato flakes in my cookies before, but if it's a cookie, I'll try it! :)
