Zucchini Spice Coffee Cake

This is a nice moist cake and a great way to use up some of that zucchini! The kids loved this cake!

Zucchini Spice Coffee Cake

1 1/2 cups flour
1 1/4 cups quick oatmeal
1 cup brown sugar
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
2 cups grated zucchini (I left the peel on for color)
1/2 cup butter, room temperature
1/4 cup plain yogurt
1 teaspoon vanilla
2 eggs

Topping

3/4 cup brown sugar
1/2 cup flour
1/2 cup quick oats
1/2 teaspoon cinnamon
1/4 cup butter, room temperature

Heat oven to 350. Spray a 9x13 baking dish with Pam.

In a mixing bowl whisk the dry ingredients. With a hand mixer mix in the zucchini, eggs, vanilla, butter and yogurt until just mixed. Pour into baking dish.

In a small bowl mix the flour, sugar, oats and cinnamon with a whisk. Mash in the butter with a fork until chunky. Sprinkle over batter.

Bake for 30-40 minutes or until a toothpick comes out clean. Serve warm or cold.
