Work For Me Wednesday And Don't Buy A Mix, Make "Speedy Brownies"!

Don't you just love Wednesdays? I do! That's when I like to start thinking about weekend plans! I have really great weekend plans this week, because tomorrow I'm flying off to Maine (with my sweet hubby) so we can visit our daughter and our grandkids! Pretty great huh? And, the best part is even though my hubby has to go home on the 12th, (I get to stay until the 23rd! Yup, I'm pretty excited! Well, not so excited that my sweet hubby has to leave, but excited that I get to stay for a while!

So, I've been getting my bags packed and I thought I'd share a little tip I learned a long time ago. I like to roll up my shirts, especially t~shirts! It works so well. I can push them around the edges of the suitcase. I also like to put socks and other small things in my shoes, and I put them around the edges of the suitcase too. Does anyone have any great packing tips to share that I can use on my trip?

I found this recipe over at The Tidy Nest. After making this I want to tell you, don't buy a mix, make these! They are really speedy! Just whisk all the dry ingredients and add the wet and mix. I love that when you pour it into (not really pour, the batter is really thick) the pan, it comes out of the bowl really cleanly. Probably because it has all that nice oil in it. Anyway, you can't go wrong with this recipe. Some brownie recipes use a lot of cocoa and this one only uses 1/2 cup.

Speedy Brownies

2 cups sugar
1 3/4 cups flour
1/2 cup cocoa
1 teaspoon salt
5 eggs
1 cup oil
1 teaspoon vanilla
1 cup chocolate chips

In a mixing bowl combine first 7 ingredients; beat until smooth. Pour into greased 9x13 pan. Sprinkle with chocolate chips. Bake in preheated 350 degree oven for 30 minutes or until toothpick inserted near center comes out cleans.

Thanks Carol for sharing. I've tried to make homemade brownies a few times but they never ..well.. tasted like the box mixes.

I might just have to try this recipe. Very simple ingredients.

I have never ever made homemade brownies...maybe because I love brownies more than anything and If I made really yummy ones from scratch I would love them even more and weigh 500 pounds.
