Strawberry Mint Cream Scones With White Chocolate Chips


I wanted to give you heads up about an ROP retail advertisement that will appear in Sunday's newspaper from Smith's Food & Drug. (this is probably only good in Utah, but Smith's is a Kroger owned store, so check Kroger's)

Beginning Sunday, May 16, all manufacturer coupons under $1 equal $1. For example, a 20¢ coupon = $1, a 25¢ coupon equals $1, a 75¢ coupon = $1, and so forth. It will be a great time to use those lower-value coupons



Strawberries are one of my favorite berries. I've been thinking about making a strawberry scone for a while and this morning I came up with the perfect combination! There is just a hint of mint, not to much, and the strawberries burst in your mouth with the white chocolate, YUM! All covered with a nice glaze. These come together really easily because you don't have to cut in any butter, just mix together with a wooden spoon.

Strawberry Mint Cream Scones With White Chocolate Chips

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoons sugar
1 1/4 cups heavy cream
1 tablespoon mint leaves, minced
1 1/4 cups strawberries, chopped
1 cup white chocolate chips

Glaze

1 cup powdered sugar
2 tablespoons butter, melted
3-4 tablespoons heavy cream
1 teaspoon vanilla

Heat oven to 425 degrees.

In a bowl whisk the flour, baking powder, salt, sugar and chopped mint. Whisk in the chopped strawberries. Stir in cream until mixture comes together.

Sprinkle flour onto a counter and pat dough out to about 1 inch thick. Cut into wedges. Bake for 20-23 minutes. Drizzle with glaze.

For Glaze

Sift the powdered sugar and whisk in the melted butter, vanilla and cream until smooth.
