Graham Cracker Pudding Cake

One of my readers commented to me that she tried my graham cracker pudding cake recipe and loved it, so since I'm on vacation I thought I'd share it again!
My mother use to make this graham cracker pudding cake when I was growing up. It's a really quick easy treat to make, and you can make it with sugar free pudding and Cool Whip to make it a lower calorie dessert! I like to cut it on an angle when I serve it so you can see the layers. It would be really yummy with lemon pudding for a summer treat, or butterscotch, ooh, so many flavors of pudding!


Graham Cracker Pudding Cake

1-2 sleeves of graham crackers
1 small package pudding, I like chocolate
1 small tub Cool Whip
food coloring and flavoring

Mix the pudding according to directions. Spread pudding on graham crackers. For this cake I broke the crackers in half, but you can leave them whole. Then stack the crackers on a plate or platter laying one side down. Make sure the end crackers don't have pudding on them. You can make your stack as big as you want. I like to mix some food coloring in the Cool Whip and some flavoring. I used mint in this one. Spread the Cool Whip over the graham cracker cake, then wrap in plastic and refrigerate for at least 4 hours. You want the graham crackers to soften and absorb the pudding.
