Chocolate Ginger Spice Muffins


These muffins have a nice rich spice flavor with a hint of chocolate. I like this recipe because it makes a big batch, so you can freeze some for later!

Chocolate Ginger Spice Muffins


2 1/2 cups flour
1/4 cup cocoa
1/2 teaspoon soda
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup brown sugar
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
2 eggs
1/4 cup applesauce
1/4 cup oil
1 cup molasses
1 cup chocolate chips

Heat oven to 350 degrees. Line 24 muffin tins with cupcake liners.

In a bowl whisk the wet ingredients.

In a large bowl whisk the dry ingredients. Mix until just mixed and add the chocolate chips. Scoop into cupcake liners with a 1/4 cup ice cream scoop.
