Asparagus Fritata

I found this recipe in a cookbook from the library and thought it would make a quick dinner. I love a fritata, it's like a crustless quiche with more eggs and less milk, so it cooks faster. This is a budget friendly recipe too. You could use a little leftover meat and any veggie's you have on hand.


Asparagus Fritata

2 tablespoons butter
1 small onion, chopped
1 lb asparagus
8 eggs
2 tablespoons cream
salt and pepper
4 oz cheese, I used pepper jack

In a 8 inch frying pan melt butter. Saute onion and asparagus for about 4 minutes.

In a bowl whip the eggs, cream and salt and pepper. Pour over the asparagus, onion mixture and cook for 4 minutes on medium low.

Heat broiler.

Sprinkle cheese over egg mixture. Cook for 6 minutes on low. Cook in the oven for 4 minutes.
