Happy Groundhogs Day and my Caramel Bars

Happy Groundhogs Day everyone! It's also my birthday! Today's an extra special birthday for me because we get to go pick up our daughter Jennie and our 3 grandkids from the airport! They live in Maine now, they moved there last fall from Washington state. Even though we talk on the phone everyday, I miss them terribly! We're so excited to have them here for 2 weeks!

These are the bar cookies that I posted over at Or So She Says for a guest post I did Sunday. Feel free to pop on over and read the whole post!

These caramel bars are soo good! They are a moist caramel bar with a nice caramel frosting. They were a big hit with my family and they gobbled up half the pan the first day.

Caramel Bars

1/2 cup butter, melted
2 cups packed brown sugar
1 teaspoons vanilla
2 tablespoons milk
2 egg
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Heat oven to 350. Spray a 9x13 pan with Pam.

In a bowl mix the butter, sugar, eggs, milk and vanilla. Mix in the flour, baking powder and salt. With a spatula smooth the mixture (it will be thick) into the prepared pan. Bake for 26-28 minutes, don't over bake. Remove and cool.
Caramel Frosting

1/4 cup butter
1/2 cup brown sugar
5 tablespoons milk
2 cups powdered sugar

Melt butter in a small saucepan over medium heat. Stir in brown sugar and milk. Heat to boiling, stirring constantly. Reduce heat to low. Stir about 2 minutes. Cool to lukewarm. Beat in powdered sugar with a mixer until smooth and spreadable. Spread think layer over bars.

Stop by and visit me sometime! My blog is full of lots of recipes, sewing and hiking. http://songberries.blogspot.com

Carol, Please give Jennie a hug for me and tell her that the fudge was divine!! My whole family appreciated it and I also took note of the price of postage. She is a doll to be so giving. Have a wonderful visit with your family. :)

Happy Birthday Carol and thanks for visiting and following my blog! You are officially the first follower that I don't really know outside of the blog world! Congrats! Oh, and tell Jennie I said Hi! Lucky you get to spend time with her, I only met her briefly for a quick tour of the house I now live in and I felt right then that we were kindred souls :) She's great and your blog is A.DOR.A.BLE!
