Homemade Turkey Noodle Soup

I love soup in the winter! When you're using up leftovers, it's kind of like free food! My mother taught me to make these noodles years ago. Chauncey just loved the noodles and the soup.

Homemade Turkey Noodle Soup

12 cups water
3-4 cups chopped turkey
1 cup chopped carrots
1 cup chopped celery
3-4 cups chopped potatoes
2 cups chopped onions
5 bullion cubes
1 tablespoon salt
1 teaspoon fresh ground pepper
1 teaspoon garlic
A couple of dashes of red pepper flakes
1 teaspoon onion powder

Noodles

2 cups flour
1 tablespoon salt
4 eggs

Cook all the soup ingredients until veggie are fork tender. Make and add noddles.

For the Noodles

Whisk the flour and salt in a bowl. Add the eggs and stir with a wooden spoon to make a dough that just comes together. If it's to dry add another egg.

Roll out on a floured surface. Roll up like a jelly roll and cut into 1/2 or so wedges. Unroll noodles and drop into hot boiling soup. Turn soup to low and let cook until noodles are done, 20 minutes or so.
