Quick Waffles

I found this recipe in my Betty Crocker cookbook and I realized that I'd never tried it before. I thought it was a little different because you cut the shortening into the flour instead of using oil. These waffles were great and super easy. They tasted like regular ones where you separate the eggs and fold in the beaten whites. I'll be making these a lot!

Quick Waffles

2 cups flour
2 teaspoons baking powder
1 teaspoon soda
1/2 teaspoon salt
1/2 cup shortening
1 1/2 cups buttermilk, I used milk soured with 2 tablespoons vinegar
3 eggs

Heat a waffle iron. In a bowl whisk the dry ingredients. Cut in the shortening with a pastry blender. Beat in the eggs and buttermilk until smooth.

Pour batter from a cup or bowl onto center of hot waffle iron (I spray mine with some Pam). Bake for about 5 minutes or until steaming stops. Carefully remove waffle.
