Banana Bread


I played around a little with a banana bread recipe and made this really good loaf of banana bread. Sloan had been begging for some banana bread lately. Ken had some and really liked it. In fact he was going to give away a loaf of it, then he found out I had only made one loaf. He asked me to make another, and I had to explain to him that I'd have to wait for the bananas to turn brown. He had never realized that you need brown bananas to make banana bread! I tried to explain to him that it just wouldn't have a good banana flavor if I used fresh bananas, but I don't think he really believed me.


Banana Bread


2 1/2 cups flour
1 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons oil
1/2 cup shortening
3/4 cup milk
1 teaspoon vanilla
1 egg
1 cup mashed ripe bananas

Heat oven to 350 degrees. Spray a loaf pan with Pam and 1 large custard cup.

In a bowl whisk the flour, baking powder and salt. In a mixer beat the sugar, shortening and oil for 3 minutes. Add the egg and vanilla. Mix in the dry ingredients, the milk and mashed banana. Spoon into the loaf pan and the custard cup. Bake the custard cup for 30-40 minutes and the loaf for 55-65 minutes. Let cool for 10 minutes then remove to cool on wire racks.
