Chocolate Donuts Puffs

I made these up the other morning, and the kids loved them! They taste like little cake donuts without all the work of rolling them out! I liked the chocolate and cinnamon flavors together.

Chocolate Donuts Puffs

2 cups flour
1/4 cup sugar
3 tablespoons cocoa
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 cup oil
3/4 cup milk
1 egg
1 teaspoon vanilla

1/2 cup sugar
1 teaspoon cinnamon

Heat 3-4 inches of oil in a frying pan. Measure the flour, 1/4 cup sugar, baking powder, salt, cocoa and cinnamon in a large bowl and whisk well. Add the oil, egg and milk and mix until just mixed.

Drop batter by teaspoonfuls (to large of puffs will not cook through) into hot fat. Fry four or five at a time about 3 minutes or until golden brown on both sides. Drain on paper towels.

Stir together the 1/2 cup sugar and cinnamon. Roll warm puffs in the sugar cinnamon mixture.

You must be reading my mind! I've been wanting to make doughnuts the last few days ;) How could you go wrong with chocolate and cinnamon?

I may have to try these this weekend! I've never made doughnuts(or fried anything for that matter) ..hopefully I won't set the house on fire!

Nicole,
Since you haven't fried anything before I'll give you some extra pointers.
When you fry them make sure you have about 2 inches of oil in a medium size frying pan. Then you want to heat it to just above medium, I set my burner at 6. I let is heat up, then I put just a tiny blit of the batter in and see if it bubbles up and brown fairly fast. If it does, put you donut puffs in, but don't crowd the pan to much. Then you just want to kind of flip them over with a fork when they start to brown a little. Then scoop them out with a slotted spoon onto papertowels to drain. Then you want to drop some more into the hot oil. Then go back and dip the drained ones in the sugar mixture.
I hope you enjoy them!
Hugs,
Carol
