A Week Of Crafts and Tuna Over Oven Roasted French Fries

I've been kind of busy sewing and crafting this week. Here's another crocheted rock necklace I made.

I made 6 of these fabric trimmed dish towels in 3 different prints.


I made 4 of these crayon rolls in two different prints.


This is one of the 5 frogs with crowns that I made. I love the ribbon tag tongues!


Here's a frog prince and they're filled with beans. Lots of good hopping fun for kids! I made some for my cute grand kids, then I decided to make some more for my Etsy Store. Stop by and see my handiwork!



I love finding something new to do with canned tuna. I saw something similar to this over at A Year at Oak Cottage. I made some changes and came up with a pretty quick yummy dinner that even my picky one ate! Score 1 point for mom! I really like water chestnuts and artichoke hearts in tuna, yum!


Tuna Over Oven Roasted French Fries


4 potatoes, peeled and sliced, rinsed and patted dry
olive oil
sea salt, garlic powder, onion powder and paprika

3 cans of tuna, drained
3/4 cup mayonnaise or Miracle Whip
1 cup chopped artichoke hearts
1 can water chestnuts, drained and chopped
1 garlic clove, finely grated
1/4 teaspoon seasoning salt
1 1/2 cups cheddar cheese, grated

Heat the oven to 425. On a large cookie sheet spread out the sliced potatoes. Sprinkle with olive oil and seasonings. Using your hands, kind of massage it all around onto the potatoes. Bake in the oven for 20-30 minutes, until fork tender.

Mix the remaining ingredients, except cheese, in a large bowl. Transfer the fries to a 9x13 baking dish, and arrange in 2 rows. Spread the tuna mixture over the fries. Sprinkle with the cheese. Bake for 20 minutes.
