Autumn Spice Muffins and a Contest


These muffins have a nice wholesome flavor. I love using whole wheat flour and oatmeal in baking. The aroma of these baking is wonderful! If you don't have pumpkin pie spice, I've included my recipe.

Autumn Spice Muffins

1 cup oatmeal
1 cup whole wheat flour
1 1/2 teaspoons soda
1/2 teaspoon salt
3/4 cup brown sugar
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 1/2 teaspoon cinnamon
1 teaspoon pumpkin pie spice*
1/2 cup oil
1 egg
1 cup milk

Preheat the oven to 350 degrees. Spray a 12 cup muffin tin with Pam.

In a large bowl whisk all the dry ingredients. Add the milk, egg and oil and mix well. Scoop into muffin tin with a 1/4 cup ice cream scoop. Bake for 25 minutes.

*Pumpkin Pie Spice

1/4 cup cinnamon
2 tablespoon ginger
2 teaspoon cloves
1 teaspoon nutmeg
1/2 teaspoon cardamom

Mix well, store in a jar.

As for your recipe, it looks so delish. I can't wait to try it. I am always out for a great muffin recipe. So far I haven't found one I love so here is hoping that this one fits the bill. I will let you know.
