Peach Chocolate Chip Muffins

Last night on the way home from violin practice (we had the dogs in the car) Chauncey was holding Seamus and we were playing around with his name. Do you ever do that? Anyway, we came home and did pictures of what we came up with! So this is Sea-Mouse aka Seamus!

And last of all, the oriental version, I'm not quite sure how to spell it, but here goes, Sia-Mia aka Seamus! Notice the oriental eyes! Oh, well, it was fun!



I still had some yummy fresh peaches in the fridge and I found this recipe in a cookbook. The kids loved them! Sloan said she didn't know peaches went so well with chocolate!

Peach Chocolate Chip Muffins

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/2 cup brown sugar
1/4 cup oil
1 eggs
1 cup milk
1 large peach, peeled and chopped and blotted with a towel
1/2 to 3/4 cup semi sweet chocolate chips

Heat oven to 400 degrees. Spray a 12 cup muffin tin with Pam.

In a bowl whisk the flour, salt, baking powder and brown sugar. Beat in the egg, oil and milk and mix until just blended. Add in the chopped peaches and the chocolate chips.

Bake for 20-25 minutes.
