Cinnamon Graham Scones

This is what I made the kids for breakfast last Saturday.

The kids wanted hot scones for breakfast this Saturday morning, so I got up early (4:30am) to make them before my last 20 mile training run! The kids ended up loving these scones! Chauncey came up with this idea for Cinnamon Graham Scones. Oh, and the run went really well. The weather was nice and cool, and we ended up running 22 miles!

Today is my 10k run in our local Peach Days Celebration!

Cinnamon Graham Scones

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup shortening
1 egg
2 tablespoons yogurt
2/3 cup milk
6 cinnamon graham cracker squares, lightly crushed

Cinnamon Glaze

1 1/2 cups powdered sugar
3 tablespoons butter, melted
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 cup milk

Heat the oven to 450 degrees.

In a bowl whisk the flour, salt and baking powder. Cut in the shortening with a pastry blender.

In a small bowl whisk the milk, egg and yogurt. Add to the dry ingredients until just mixed. Mix in the crushed cinnamon graham crackers.

Put the dough onto a floured surface and knead 2 times. Form into a ball and pat into a circle. Cut into wedges and place on a cookie sheet. Bake for 10-13 minutes until golden brown.

For Cinnamon Glaze

Beat all the ingredients in a bowl with a hand mixer.

Spread glaze onto hot scones.
