Cinnamon Bun Layer Cake

Today is my Marathon! Yup, 26 miles! I'm excited, scared and nervous! It's called The Top Of Utah. I'm running it with a friend, we've been training for it most of the year. I have another friend that will meet us and run the last 6 miles with us. My son Chauncey said he'd run a few miles with us too! That should make it really fun!

I got up at 3:30am to get ready for the race, it starts at 7am. I am so sleeping in next Saturday!
Here's something fattening to start of your day! My reward after the race is watermelon! Yup, I'm running for watermelon! We're meeting some friends for a picnic after the race. My sweet hubby will drive the course from mile 14 1/2 on and keep meeting me with the kids. It's so nice to see my family along the way! The first 14 1/2 miles is down a canyon, and they close that road to traffic for the runners. It is always so great to come out of the gorgeous canyon and see my family waiting for me!





I found this recipe in a magazine about 6 years ago. My sweet Hubby helped Chauncey make this cake for a Cub Scout event. Chauncey remembered how good it was and wanted it for his birthday, so I dug out the recipe. It is really good, and the frosting. Of course with 2 packages of cream cheese and 3/4 cup butter, it has to be good! I did have a bite, then I went in the freezer and got a Skinny Cow mint ice cream sandwich!



Cinnamon Bun Layer Cake


3/4 cup plus 3 tablespoons brown sugar
1/2 cup butter, room temperature
1 teaspoon plus 1 tablespoon cinnamon
1 package yellow cake mix
1 cup sour cream
1/4 cup water
3 eggs
1/3 cup oil

Frosting

2 package cream cheese, room temperature
3/4 cup butter, room temperature
2 teaspoons vanilla
3 cups powdered sugar

Heat oven to 350 degrees. Spray 2, 8 inch or 2, 9 inch round cake pans with Pam.

In a bowl mix the brown sugar, 1/2 cup butter and 1 teaspoon cinnamon. Spread half of this mixture in each pan tow within 2 inches of the edge.

In a mixer beat the cake mix, sour cream, eggs, oil and water for 2 minutes. Transfer 1 cup of the batter to a separate bowl. Mix in the reserved brown sugar and cinnamon.

Divide cake batter between the two pans. Drop cinnamon batter by heaping tablespoons onto cake batter. Swirl the batters, but don't swirl into the cinnamon mixture on the bottom of the pan.

Bake for 25-30 minutes. Cool on wire racks for 10 minutes. Remove from pans and allow to cool before frosting the cake.

For The Frosting

Beat the cream cheese, butter and vanilla until fluffy. Add in the powdered sugar and beat everything until fluffy. Frost cake.
