Spicy Bean and Corn Salad


We drove up the canyon last night to see a herd of deer that we'd heard were grazing in a field. I couldn't get a good picture of the deer, but I got a great picture of Jennie, and she got some good deer pictures!



Here's sweet Jillian. We were hanging out in the front yard last night. It was such a gorgeous evening.

This is a quick and easy salad I came up with a while back. My family said it would be good with chips, its kind of like a Texas Caviar.


Spicy Bean and Corn Salad

1 can black beans, drained and rinsed
1 can whole corn, drained
1 pint salsa, any kind
1/2 cup chopped onion
5 green onions, chopped
1 stalk celery, chopped
1 large red onion, chopped
1/2 cup chopped cilantro
sea salt and fresh ground pepper to taste

Mix all the ingredients in a bowl, and chill for at least an hour before serving.
