Banana Peanut Butter Muffins

The housewife's predicament , what to do with those brown bananas! I looked through my cookbooks and found this recipe. These are yummy!


Banana Peanut Butter Muffins

1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon soda
1/3 cup butter, softened
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup plain yogurt
1/2 cup mashed banana
1/2 cup mini chocolate chips, optional

Glaze

1 cup powdered sugar
1 tablespoon cocoa
2 tablespoons butter, melted
4-6 tablespoons milk

Mix altogether, start with 4 tablespoons milk and add more if needed.

Heat the oven to 375. Grease a 12 cup muffin tin and you'll need 2 custard cups greased.

In a medium bowl whisk all the dry ingredients. Mix the banana and yogurt in another small bowl.

In a mixer mix the butter and sugar for 2-3 minutes. Beat in the egg and vanilla.

Mix the flour mixture in alternately with the yogurt-banana mixture until just mixed. Fold in the chips.

Scoop into muffin tins with a 1/4 cup ice cream scoop.

Bake 22-26 minutes.

Drizzle with glaze.
