Sour Cream Muffins

Sloan asked for muffins this morning, but she wanted chocolate chip muffins. I was out of chocolate chips and I had some sour cream to use up, so I found this recipe. Sloan loved them!


Sour Cream Muffins

1 1/2 cups flour
1 cup sugar
1 teaspoon soda
1/2 teaspoon baking powder
1/2 cup butter
2 eggs
1 teaspoon vanilla
1 cup sour cream

Heat the oven to 350 degrees. Spray a 12 cup muffin tin with Pam.

Whisk all the dry ingredients in a large bowl. Cut in butter with a pastry blender.

In a small bowl whisk the eggs, vanilla and sour cream.

Mix the wet ingredients into the dry ingredients until just mixed. Scoop into prepared muffin tins. I like to use an ice cream scoop. Bake for 20 minutes.
