Spunky Cookies, a request from my kids and another contest!



My kids use to get these cookies with their lunch at school and they'd beg for them at home. I finally came up with this recipe. It was kind of hard because I hadn't ever had one and I had to go by what they told me. You know mom, it's a chocolate cookie with white chips in it. Hey, it's got regular chips in it to. Me, how does the top look, does it crack? Ya, it does a little, and it's kind of soft, but not to soft. They told me these were perfect when they tried them! One of the many mom talents I've developed over the years!





Spunky Cookies

1 1/4 cup shortening
1 1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon almond extract
1 1/3 cups flour
2/3 cup whole wheat flour
1 teaspoon soda
1/2 teaspoon salt
2/3 cup semi sweet chocolate chips
2/3 cup white chocolate chips

Preheat oven to 350 degrees.

Cream the shortening and the sugar for 2-3 minutes. Add the eggs, vanilla and almond extract and beat well. Add the dry ingredients. Mix in the chips. Drop by spoonfuls onto cookie sheets. Bake for 10-12 minutes. Cool on wire racks.
