Soft Oatmeal Cookies and a Contest!
I've got several recipe for boiled raisin cookies and so I decided to try one when I needed to take cookies to a friend. These turned out to be a big hit! I think when someone is going through a hard time, take them cookies is a good thing!
Soft Oatmeal Cookies
1 cup raisins
1 cup sugar
1 cup shortening
2 eggs
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon soda
2 cups flour
2 cups quick oats
Cover raisins with water in a small pan and bring to a boil. Reduce heat and simmer for 5 minutes. Poor into a strainer and let cool while you make the cookies.
Cream shortening and sugar for 2 minutes. Add eggs and vanilla and mix. Add the dry ingredients, mixing well. Add the raisins and mix.
Scoop onto cookie sheets with a cookie scoop. Mash down a little with your fingers. Bake for 10-12 minutes at 350 degrees.
