French Breakfast Muffins


These are fun muffins that are dipped in butter and rolled in cinnamon and sugar after they were baked. The kids ate them up!

French Breakfast Muffins

1/3 cup shortening
1/2 cup sugar
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milk
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup butter, melted

Beat the shortening and 1/2 cup sugar in a bowl with a hand mixer for 2-3 minutes. Add the egg and mix.

In another bowl whisk the flour, baking powder, salt and nutmeg. By hand mix in the flour mixture and the milk, just until incorporated.

Spray a 12 cup muffin tin with Pam and fill cups 3/4 full. Bake at 350 degrees for 20 minutes.

In a bowl mix the remaining 1/2 cup sugar and the cinnamon. In another bowl have the melted butter ready. Dip each muffin in butter then in the cinnamon sugar mixture. Serve.
