Food for Thought and Corn Chowder

Food for Thought

Corn Chowder is one of our families favorite dinners in the summer! It is so good with fresh corn on the cob. I've even used leftover corn on the cob that was already cooked. I used two large ears, but you can add more if you like. Even my picky eater Sloan enjoyed it!

Corn Chowder

2 large ears corn, cut the corn off the cob
1 lb bacon
1/2 onion, chopped
3 tablespoons butter
1/2 cup flour
4 cups milk, I used whole milk, it makes it taste creamier
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper to taste

Cube up the bacon and brown it in a large pot. Drain out all but a couple of tablespoons of the fat, and remove the bacon. Add the onion and cook until clear. Add the corn and cook for a few minutes. Add the butter and when it's melted add the four and cook for a few minutes as you stir. Add about 2 cups of the milk and stir until it thickens and starts to boil, then add the rest of the milk and the seasonings and cook until thick. Add the bacon back in and serve with parsley sprinkled on top.

You asked what I use my bacon grease for, well mostly to grease pans with. I use it all the time on my dutch/cast iron pans. After I wash them with water (no soap), I dry them and brush on some new bacon grease.

I am going to try bacon grease cold/frozen in savory pastry pie crust. My mom told me her great aunt or grandma used to use chicken grease in her pie crusts. They were so well liked that she often would make pies and sell them when they needed extra money.

When I made your corn chowder recipe, I will use my bacon grease from my pot. I will pull out some of the frozen bacon meat and chop it up and toss it into the soup when I add the milk. Then the bacon will quickly thaw and heat up as the soup thickens. This is how I make all soups and casseroles that require cooked bacon and bacon grease.

I often use bacon grease to make my white sauce instead of butter, or a half grease half butter combo, my family likes the taste.

I have a lot of experimenting to do with the grease, I would like to be able to use it and save money on oils and butter if possible. But until the kids (11dd & 14 ds) get back to school, I'll be putting off any experimentation ideas.

I kind of need my concentration when I am experimenting, and my kids don't respect my quiet thinking time very well. They would rather have my undivided attention. I would rather spend time with them, time is flying by so fast that I know they will soon be out on their own. I will then miss them so much. So I am trying to spend quality and quantity time with them right now.
