Metamorphosis Monday & Cheesecake & Carrot Cake a Father's Day Treat


What can you make with a pile of bike parts? Well my sweet hubby and daughter came up with a great solution! She loves her scooter, but she's getting so tall, so they made a trail scooter.




Here is her old one next to her new one!


Sloan picked out all the colors for her scooter from her dads paint shelf, so the whole scooter was made out of salvaged parts! She is one happy girl!

A while back I was thinking about what to make for my sweet hubby and my dad for a special Father's Day dinner. I was poking around on some blogs and found a recipe for a cheesecake and carrot cake combination. It was a Daring Bakers Challenge from April. (I don't participate in that, but it looked so good I had to try it!) I thought, wow, that's my husbands two favorite desserts, I never thought of combining them! So I decided that this would be dessert for Father's Day. I have my own favorite cheesecake recipe that I've adapted over the years and I decided to use it for the cheesecake layer and my favorite carrot cake for the cake layers. So here it is!




Cheesecake &
Carrot Cake

Cheesecake

3 8oz package cream cheese, room temperature
1 cup sugar
1 teaspoon vanilla
3 eggs

Whip cream cheese until fluffy, gradually add sugar and beat well. Add eggs one at a time beating well. Beat in vanilla. Pour into a 9 inch cheesecake pan and bake at 300 for 1 hour. Remove from oven and cool on a wire rack until room temperature, then chill in the freeze overnight.

Carrot Cake

2 cups flour (I add an extra 1/4 cup for high altitude)
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
4 eggs
1 1/4 cup oil
2 cups sugar
3 cups grated carrots

Heat oven to 350 degrees. Grease and flour 2 cake pans the same size as your cheesecake pan. I did 9 inch pans.

Measure all the dry ingredients into a bowl and set aside.

In a mixing bowl fitted with whisks beat the sugar and oil. Add the eggs and beat well. Add the flour mixture and the grated carrots and mix well. Pour into prepared pans. Bake for 40 minutes or until a toothpick inserted comes out clean. Let cool for 10 minutes in the pans on wire racks. Remove from pans and let cool. Wrap in plastic wrap until you're ready to assemble the cake.

Cream Cheese Frosting

1/2 cup butter, softened
1 8 oz package cream cheese, softened
2 teaspoon vanilla
2 pounds powdered sugar

Beat all the ingredients until light and fluffy. Spread on cake.

To assemble the cake

On a large platter put a little blob of frosting. Place a cake layer and spread it with frosting. Now put on the cheesecake layer and frost it, then the last cake layer. Frost the top and sides of the cake.

Okay my sons will die when I show this to them. They are going to want one now too. Tell your daughter it looks great. And tell you hubby what a great transformation.
Now on the cake- oh that is to die for. My hubby loves cheesecake and son loves carrot cake- gotta try this.

How cool! Love the father-daughter re-do of the scooter! Some of my best memories from childhood were making things with my father. :-)

I love the idea of combining both cakes! So gonna have to try this. I can also see a chocolate layer, cheesecake and another chocolate layer. The new combos are endless. Thanks for sharing your findings with us.

I also love the scooter make-do. I would love to have one like it. I have always wanted to ride with the kids, but the handles were too short for me to have fun. Great way to make it fun for taller people.

Yes, I love the recycling! All children need to learn to do this so there's not so much "stuff" coming in from overseas. They could patent this stuff!
