Butterscotch Pudding

Happy Memorial Day Weekend! I'm hoping to spend some time with my family. I want to play Killer Bunnies, go for some runs with friends, take the canoe out and just goof off!


Butterscotch pudding is such a yummy old fashioned treat, I would call it a comfort food. I used the leftover egg whites to make a brown sugar meringue and I toasted it in the oven. My kids said it tasted like a brown sugar marshmallow!


Butterscotch Pudding
2/3 cup brown sugar
2 tablespoons cornstarch, heaping
1/8 teaspoon salt
2 cups milk
2 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoons vanilla
In a 2 quart saucepan mix sugar, salt and cornstarch. Combine egg yolks and milk; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into dessert dishes. You can either put a meringue on it or cool slightly and chill or serve warm with whipped cream.

Brown Sugar Meringue
2 egg whites
1/2 cup brown sugar
1/4 teaspoon cream of tartar
Beat the egg whites until foamy, add the cream of tartar and the brown sugar and beat until stiff peaks form. Plop it on the warm pudding making sure to get all the way to the edges. Make little peaks on top with a knife. Broil under a hot broiler until toasted.
