Golden Brown Coffee Cake

This cake is soooo good! I could just eat all the edges off! Mmm, the brown sugar goodness of this cake is amazing! My whole family enjoyed this cake.

Golden Brown Coffee Cake

Crumb Topping

1 cup brown sugar

1/4 cup flour

1/4 cup butter, room temperature

1/3 cup pecans or walnuts, chopped

Cake

3/4 cup brown sugar

1/2 cup butter

3 eggs

1 teaspoon vanilla

1 cup buttermilk (I used milk soured with 1 tablespoon vinegar)

3 cups flour (add 3 more tablespoons for high altitude)

2 teaspoons baking powder

1 teaspoon soda

1/2 teaspoon salt

Heat oven to 350 degrees. Spray a bundt pan with Pam. In a large bowl whisk the flour, baking powder, soda and salt (for cake). In another bowl whisk the brown sugar and flour for the crumb mixture. Cut in the butter and add the pecans and toss. Set aside.

In a mixer cream the butter and the brown sugar, mix for 2-3 minutes. Beat in the eggs and vanilla. Add half the flour mixture and half of the buttermilk, beat, then add the remaining flour and buttermilk. Batter will be thick. Scoop half of the batter into the bundt pan, add half of the crumb topping. Top with remaining batter and crumb topping. Bake for 1 hour or until toothpick comes out clean. Cool for 10 minutes. Loosen edges and flip onto cake plate.
