Cape Breton Scones with Chocolate Chips

P4220285

P4220286

I made these for breakfast the other morning. I love how easy they are to mix up, since you don’t have to cut in any butter. They made up really fast and my family loved them. They even ate the left overs the next day!

Cape Breton Scones with Chocolate Chips

2 cups flour

1 tablespoon baking powder

1/4 teaspoon soda

2 tablespoons sugar, plus more for sprinkling over the top

1 teaspoon salt

1 cup raisins (I used chocolate chips)

1/2 cup sour cream

1/4 cup oil

1 egg

3 tablespoons milk, plus more to brush over the top

Heat oven to 425 degrees. In a bowl whisk the flour, soda, salt and baking powder.  In a small bowl whisk the egg, add the 3 tablespoons milk, sour cream and oil. Mix into the dry ingredients, then add the raisins or chocolate chips. Divide dough in half and kind of roll each half in a ball, then pat it out on a cookie sheet to make two circles about 6 inches wide. Score with a knife into 8 wedges. Brush with milk and sprinkle with sugar. Bake for 15~20 minutes or until puffy and lightly brown.

Well this certainly looks doable. Quick and easy too.
Thanks for the idea.
