Double Chocolate Peanut Butter Stuffed Cookies


What could be better than peanut butter and chocolate! I found this recipe a while back and my husband and son loved them. My daughter Sloan won't eat chocolate and peanut butter together, so this time I made a double batch of the cookie dough and she was happy! I think this dough is very versatile and would be good with Rolo's in it. I also gave some to a friend for her birthday, and she loved them.

Double Chocolate Peanut Butter Stuffed Cookies


Filling~

1/2 cup peanut butter, creamy or crunchy
1/3 cup powdered sugar


Cookie Dough
1 cup flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter, room temperature
4 tablespoons shortening
3/4 cup sugar
1/2 teaspoon vanilla
1 egg
2/3 cup semi-sweet chocolate chips


Preheat oven to 350 degrees.
Prepare filling first. Mix together peanut butter and powdered sugar in a small bowl. Roll into balls a little bigger than a marble. Put on a plate and refrigerate for 30 minutes.



In a mixer beat butter, shortening and sugar until well mixed. Beat in egg and vanilla. Add dry ingredients and mix well. Mix in chocolate chips. Chill dough for 30 minutes.
Using about a tablespoon of dough, flatten it out in your hand and put a peanut butter ball on it and roll the dough up around it. Seal it up and place on cookie sheets. Bake for 12 minutes Let cool for about 3 minutes before removing to cooling racks.
