Banana Whoopie Pies

My husband especially liked these whoopie pies! I like that they use up some of my brown bananas!

Banana Whoopie Pies
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups sugar
1/4 cup oil
1  egg
1 teaspoon vanilla
3/4 cups mashed banana

Heat oven 350 degrees. In a bowl whisk the flour, cinnamon, baking powder and salt. In a large bowl, cream together the oil and sugar until light. Beat in egg  followed by vanilla and mashed banana. Add flour mixture and stir until just mixed.


Drop with a cookie scoop onto cookie sheets and bake for 12-14 minutes, or until cookies are lightly browned around the edges and “set” in the center.
Remove to a wire rack to cool.
Makes about 2 dozen cookies (1 dozen sandwich cookies).

Cream Cheese Filling
8 oz cream cheese, room temperature
8 tablespoons butter, room temperature
1 teaspoons vanilla 
8 or more cups powdered sugar

In a medium bowl, beat together cream cheese and butter until smooth. Blend in vanilla and powdered sugar until mixture is smooth and thick add more powdered sugar if the filling seems to thin.
