These are just perfect for fall ant they make your kitchen smell wonderful! They mix up really fast and store well.
Gingerbread Muffins
2 cups flour
1/4 cup sugar
2 1/2 teaspoons baking powder
2 teaspoons ginger
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 egg
3/4 cup milk
1/4 cup oil
1/4 cup molasses
Heat oven to 375. Line a 12 cup muffin tin with liners.
In a bowl whisk all the dry ingredients. Mix in the egg, oil, molasses and milk until just mixed. Scoop into muffin liners with a 1/4 cup ice cream scoop.
Bake for 15-20 minutes. For the glaze I just mixed up a little powdered sugar and milk with a few drops of vanilla.
