Cinnamon Scones With Butterscotch Butter

PB041203

These are so yummy with the butterscotch butter! I love making scones, everyone thinks you went to a lot of work, but they’re not. But I never tell my family that!

Cinnamon Spiced Scones with Butterscotch Butter

2 cups flour
1/4 cup sugar, plus more for sprinkling
2 teaspoons baking powder
1  teaspoon salt
2 teaspoons cinnamon
2/3 cup butter, chilled and cut into cubes
2/3 cup milk, plus more for brushing

Butterscotch Butter
4 tablespoons (1/2 stick) butter, at room temperature
4 tablespoons butterscotch topping

Heat oven to 400.

In a bowl whisk flour, sugar, baking powder, salt and cinnamon. Add butter and cut in with a pastry blender until the butter is pea-sized. Add the buttermilk and mix until just blended. On a floured surface knead dough 4 times. Pat into a circle and with a sharp knife, cut  into 12 wedges.

On a baking sheet arrange scones 1” apart. Lightly brush each with buttermilk, sprinkle with sugar.

Bake until golden brown, about 10~12 minutes or until lightly browned.

Butterscotch Butter

While the scones are baking, make the butterscotch butter. Combine butter and butterscotch in an electric mixer. Beat until completely combined, then transfer to a small bowl and refrigerate until ready to spread on scones.
