This is such a great recipe! I made it before as the Caramel Apple Streusel Coffee Cake, you can find the recipe here. This coffee cake reminds me of a pastry, but so much easier to make!
Cherry Streusel Coffee Cake
2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup milk
2 eggs
1/2 teaspoon vanilla
1/8 teaspoon almond extract
1 can (21 ounces) cherry pie filling
Glaze
3/4 cup powdered sugar
1 tablespoon or so of milk
1/4 teaspoon of vanilla
Heat oven to 325. Spray a 9x13 pan with Pam.
In a bowl whisk the flour, sugar, baking powder and salt. Cut in butter with a pastry blender until mixture is crumbly. Reserve 1/2 cup of mixture for topping.
Beat the milk, eggs, vanilla and almond extract until well mixed. Add to crumbly mixture and stir until blended. Pour into prepared pan. Spread with pie filling. Sprinkle with reserved crumbs.
Bake for 40 to 45 minutes, until lightly browned and toothpick inserted in center comes out clean. Drizzle with glaze.
Serve warm or at room temperature.
For Glaze
Mix all the ingredients with a whisk.
