We always love a good chocolate cookie and this one is super good with double the chocolate! I love the way the top crackles with the sugar on it! These cookies have a nice mild chocolate flavor.
Chocolate Crackle Cookies
1 cup chocolate chips
2/3 cup butter
1/2 cup sugar
1 egg
1/4 cup corn syrup
1 3/4 cups all purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 cup chocolate chips

Heat oven to 350 degrees. Put chocolate chips (1/2c) in a small bowl and microwave for 30 seconds, stir and do 15 second increments until melted.
Cream shortening, gradually add sugar, beating until light and fluffy. Add egg, corn syrup and melted chocolate, beating well.
In a separate bowl whisk the flour, soda, salt. Add to the creamed chocolate mixture, beating until blended.
Shape dough into balls using a cookie scoop full of dough for each ball, roll in sugar. Place on cookie sheets about 2 and 1/2 inches apart. Bake for 13-15 minutes. Cool on sheet for 2 minutes then remove to wire rack.
