Caramel Apple Streusel Coffee Cake

I found a can of Caramel Apple pie filling at Walmart the other day and I knew just what to do with it! The is one of the best coffee cakes I’ve made and my family loved it! I can’t wait to try it with cherry pie filling.

Caramel apple Streusel Coffee Cake

2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup milk 
2 eggs
1/2 teaspoon vanilla
1/8 teaspoon almond extract
1 can (21 ounces) caramel apple pie filling

Heat oven to 325. Spray a 9x13 pan with Pam. 
In a bowl whisk the flour, sugar, baking powder and salt. Cut in butter with a pastry blender until mixture is crumbly. Reserve 1/2 cup of mixture for topping. 
Beat the milk, eggs, vanilla and almond extract until well mixed. Add to crumbly mixture and stir until blended. Pour into prepared pan. Spread with pie filling. Sprinkle with reserved crumbs. 
Bake for 40 to 45 minutes, until lightly browned and toothpick inserted in center comes out clean. Serve warm or at room temperature.

Great recipe! My husband loves coffee cake. Next time I go to Walmart, I'll pick up some pie filling so I can try this :)
