Brown Sugar and Butter Acorn Squash

This is a really simple recipe for acorn squash. This is the way my mother always makes it, but she always cuts hers the other way. I like to cut them this way so they look like a flower. For mine (I don’t like to have all the sugar and butter)I just sprayed the inside of the squash with Pam and then added a little Splenda.

Brown Sugar and Butter Acorn Squash

2 acorn squash

8 tablespoons brown sugar

4 tablespoons butter

water

Heat oven to 400 degrees. Cut the squashes in half and clean out centers. Arrange in a shallow pan with 1~2 inches of water. Put the butter in each half and then 1~2 tablespoons of brown sugar in each half. Bake for 45 minutes or until fork tender.
