Zucchini Brownies

If you look over this recipe, you’ll notice that there are no eggs! These make up into a nice dense brownie that is really moist. These are not cake~like, like a lot of zucchini brownies. Everyone loved them!

Zucchini Brownies

1 1/2 cups sugar

1/2 cup oil

2 cups zucchini, grated

1 teaspoon vanilla

1 1/2 teaspoons soda

1 teaspoon salt

2 cups flour

 

Frosting

6 tablespoons cocoa

1/4 cup butter

2 cups powdered sugar

1/4 cup milk

1/2 teaspoon vanilla

Heat oven to 350 degrees. Spray a 9x13 pan with Pam.

Mix everything together in a mixer. It will be crumbly, not really like a regular batter. Spoon it into the prepared pan and pat it out.

Bake for 30 minutes.

For Frosting

Mix everything together with a hand mixer and beat until smooth. Spread on cooled brownies.
